All of your ingredients should be from organic non-GMO pasture-raised and grass-fed as much as possible and as much as you can afford. Try to support and source your foods from your local organic farms because your health depends on good quality clean food.

Pan Seared Halibut

Ingredients:

  • 1 Pound of fresh Halibut ( no skin)

  • 4 tablespoons of grass-fed butter

  • 1  tablespoon of extra-virgin olive oil

  • 4 slices of lemon

  • ¼ cup of Chardonnay

  • 3 cloves of finely chopped Garlic

  • 2 tablespoons of fresh lemon juice

  • 2 tablespoons of capers

  • 2 tablespoons of fresh flat-leaf parsley

  • ½ teaspoon of sea salt

  • ¼ teaspoon of fresh ground black pepper

Directions:

Sprinkle the fish with sea salt. Put 2 tablespoons of the grass-fed butter and olive oil in a medium skillet over medium heat. Mix the butter and oil around once it starts to slightly brown, add the fish, sprinkle with sea salt, and freshly ground black pepper.

Cook for 5 to 6 minutes then gently flip it over and cook for another 5 minutes, add in the lemon slices while the fish is cooking. Cook the fish until it’s flaky. Remove the fish from the pan and the lemon slices while the fish is cooking. Pour off the fat then add 2 tablespoons of it back to the pan.

On medium heat add the garlic and wine. Cook this for a minute then add in the lemon juice, parsley, and capers. Cook this for one minute then add 2 tablespoons of butter and you have a nice sauce. Add the fish back into the pan and spoon the sauce over the fish.

This Is a very easy recipe to make. If you have some of the ingredients cut beforehand it’s even easier. Halibut is a delicious fish and it’s one of my favorites.
