All of your ingredients should be from organic non-GMO pasture-raised and grass-fed as much as possible and as much as you can afford. Try to support and source your foods from your local organic farms because your health depends on good quality clean food.

Chimichurri Sauce Over Grass-Fed Beef

This recipe makes around 2 cups. You can use this as a marinade or you can just put it on top of your beef or meat of choice. It’s great to add to eggs in the morning if you don’t use it all.

Ingredients:

  • 1 shallot, finely chopped

  • 1 Fresno chili, finely chopped

  • 4 garlic cloves finely chopped

  • ½ cup of red wine vinegar

  • 1 teaspoon of sea salt

  • ½ cup of Cilantro finely chopped

  • ¼ cup of flat leaf Parsley finely chopped

  • 2 tablespoons of oregano finely chopped

  • ¾ of a cup of extra virgin olive oil

  • 2 pounds of grass-fed flat iron steak

     

Directions:

You can put all of these ingredients in a mini food processor to make it even easier.

Save a 1/2 a cup of the chimichurri to set aside if you’re using it as a topping.

Put your meat in a marinade pan and toss with the remaining chimichurri. Putting it in the refrigerator for at least three hours or overnight is even better. This is excellent grilled. Use the reserved sauce over the grilled meat.
