Smashed Cheesy Garlic Brussel Sprouts

Ingredients:

  • One and a half pounds of brussels sprouts
  • 2 tablespoons of olive oil. https://www.kasandrinos.com/collections/olive-oil (my favorite organic olive oil!)
  • 1/4 cup of freshly Parmesan cheese
  • 1/4 cup of freshly Pecorino cheese
  • Blend the cheeses together
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • ½ tsp of red pepper flakes

Directions:

Preheat your oven to 425°

Bring a pot of water to a boil and 2 teaspoons of salt.
Once the water has boiled, add the brussels sprouts. Boil them until tender and bright green but not fully cooked. About 6 to 7 minutes. Drain them and dry them.

In a large bowl add the olive oil and ¼ cup of cheese, reserve the rest in a separate bowl. Add the garlic powder, onion powder, red pepper flakes, salt, and pepper to taste and toss the brussels sprouts so they get coated with the mixture. Transfer the brussels sprouts to the baking sheet. Use a small glass or spatula to smash them flat on the baking sheet. Dip each brussel sprout in the reserved grated cheese so that one side is coated. Now place them cheese side down on the baking sheet and bake them for 20 to 25 minutes or until they are golden brown. These are delicious and we’ll go with any meal or just eat them alone.
