All of your ingredients should be from organic non-GMO pasture-raised and grass-fed as much as possible and as much as you can afford. Try to support and source your foods from your local organic farms because your health depends on good quality clean food.

Almond Flour Tortillas

You can make a batch of these and use them for a few days. Use them for breakfast roll-ups or lunch and dinner. Once you get down to the knack of spreading it around the pan with a spatula, it’s very easy. These are really convenient to have around.

Ingredients:

All ingredients go in the blender

  • 1 cup of almond flour 
  • 1 Cup of arrowroot 
  • ¾ cups of almond milk
  • 2  organic eggs
  • ½ teaspoon of sea salt
  • 1 tablespoon of extra virgin olive oil, in the mix
  • 3 tablespoons of olive oil set aside in a small bowl for cooking

Directions:

Add all the ingredients to the blender and blend until smooth. Get your skillet warmed and coated with olive oil. You’re going to use ¼ cup measure to do this. Once your skillet is heated over medium heat, pour 1/4 cup of the batter onto the skillet You can gently swirl your pan to spread the batter out into a thin round shape or you can use a spatula to spread it out over the pan in a round shape. They cook for 1-2 minutes, then flip and cook for another 1-2 minutes Until golden brown. You can brush with more olive oil and add a little sea salt when done. Then repeat until the batter is gone. These are great right off the skillet And you can put anything you want inside of them. You can add shredded chicken and arugula or my next recipe, Curry Chicken Salad.
