Orange Beef
Ingredients:

2 pounds of top sirloin beef, thinly sliced

⅓ cup of Monk fruit

⅓ Cup of rice wine vinegar

1tablespoon of coconut amino’s
-
2 cups of extra virgin olive oil or Avocado oil

¼ cup of arrowroot powder
-
2 teaspoons of orange zest
-
3 tablespoons of ground ginger
-
4 cloves finely chopped
-
8 baby bok choy
Directions:
In a small bowl mix the Monk fruit rice wine vinegar and coconut aminos.
Heat the oil in the skillet over medium to high heat. Toss the beef strips in arrowroot powder to coat. Cook them in the skillet until they are crispy and then set them aside. Add the orange zest, ginger, and garlic to the pan and cook for three minutes.
Now add to the pan the Monk fruit mixture and bring this to a boil then add in the baby bok choy and the beef strips. Stir it around and make sure everything gets coated. Cook for 3 minutes until done.
This recipe is extremely delicious. I always double the recipe for leftovers, because my whole family loves it!
