Wild Caught Salmon Dinner
Ingredients:

4-6 ounce wild caught salmon filets.

2 large garden fresh tomatoes

½ of a large yellow onion

Juice from ½ of a freshly squeezed lemon

1 lemon sliced into thin round slices

2 tablespoons of Capers
-
2 tablespoons of chopped flat-leaf parsley
-
½ teaspoon of sea salt
-
½ teaspoon of fresh ground black pepper
Directions:
Put the salmon filets in a large skillet. Bake this at 350. Drizzle the Salmon with olive oil and season with sea salt and pepper. Place the tomatoes over the salmon and drizzle with more olive oil and seasoning those with sea salt and pepper. Place the onions evenly over the tomatoes. Drizzle again with the extra-virgin olive oil and season with sea salt and pepper. Place the lemon slices evenly over the onion.
Place in the oven for 20-30 minutes or until cooked. Pop with the capers and the flat leaf parsley. This is a super healthy and easy meal to put together and cook.
