Yummy Kale Salad

Ingredients:

  • 3 tablespoons of extra virgin olive oil

  • 1 shallot thinly sliced

  • 3 Cloves of garlic chopped

  • 1 Cup of dried cranberries

  • 1 bunch of kale

  • 2 tablespoons of red wine vinegar

  • 2 teaspoons of honey

  • Juice and zest of half a lemon

  • ⅛ of a teaspoon of sea salt

  • ⅛ of a teaspoon of fresh ground black pepper

  • ⅛ of a cup of freshly ground flax seeds

  • ¼ cup of sliced almonds( optional)

¼ of crumbled goat cheese(optional)

 

Directions:

Get out your skillet and heat 2 tablespoons of extra-virgin olive oil over medium to high heat. Add in the shallot and sauté for 5 minutes. Add in the garlic and saute for one minute. Add in the cranberries, red wine vinegar, honey, lemon juice, and zest, stir to combine, and season with salt and pepper

In a large bowl toss the kale with olive oil and a pinch of sea salt and freshly ground Flax seeds. Massage the kale for a few minutes or until it’s tender. Add in the cranberry salad mixture and almonds and toss to combine and crumbled goat cheese if desired.
